This is a rustic complex coffee offering much to the cup flavors. The dry grind fragrance in this extra dark roast has a potent intense gamey sweet boldness that fills the air like a walk along fisherman’s wharf. Well balanced, primal, and spicy, with a heavy molasses scent. The cup takes on a very different tone after brewing. Heavy and more pungent notes of burnt wood smokiness with heavy chocolate and blackstrap molasses. The cup is primitive, simple, and solid Hints of fresh earth, campfire, and caramel dance as the liquid cools with traces of blackberry in the finish. The mouth feel seems full and rounded, with a silky milk chocolate finish. It's quite complex, and as it fades there are anise-black licorice notes, black tea, and mace spice. Moderate body and a muted soft acidity exemplifies the as a classic “old school” coffee choice. Savor it with a chunk of bitter sweet Belgian Chocolate..finish with a glass of heavy red wine. Heaven.
